Okay, I thought I would put my bread/rolls recipe on here.  I love this.. it is so quick and easy and versatile!

Bread


5 cups flour: bread flour is best, but use any combination of bread, white, whole wheat.

2 TBSP dry yeast. I keep mine in the freezer. I just pull it out and use it. 

3 TBSP sugar or honey, or sweetener of choice

3 tsp salt

liquid Soy Lecithin

2-3 cups hot tap water

Mix all dry ingredients in electric mixer bowl. (I have a Kitchen Aid mixer. If you have a Bosch, I bet you can double the recipe.)  Pour about 3 large quarter size circles over the dry ingredients, then 2 cups hot water.  Set in mixer, mix on 1st speed while dough mixes.  Have another 1 cup of hot water handy as dough mixes together. monitor dough as it gathers together, adding small amounts of water until correct dough consistency.  Dough should be sticky as it pulls away from the bowl.  When correct consistency put mixer on 2nd speed and mix for about 5 minutes.  Set dough aside to rise for about 1/2 hour or until double in size. Punch down again, let rise until double again,  (Each time it rises, cover with towel to keep from drying out.  Even better, a slightly damp towel.)

Spray 2 bread pans,  shape loaves and set them inside.  Or, I like to make about 2 dozen rolls and a loaf of bread, as I usually make these for dinner, or for lunches with chicken salad.  

Set aside and let rise one more time. Cover with towel as it rises.

Bake in preheated 350 degree oven. 

When I make the dinner rolls/lunch rolls, I put Italian seasoning into the dry ingredients as I make the dough.  It is wonderful!

This dough is versatile. We use it to make home made pizza's, cinnamon rolls, scones, and anything else we can think off!  It is quick and easy.  When short on time, I have skipped the second rising and they have come out fine when I use the bread dough.  I don't skip it when using All Purpose flour or Whole Wheat flour.
